Indonesian Sweet and Sour Sauce #1

There must be at least a hundred variations to the recipe for Indonesian Sweet & Sour. This recipe for Babi Pangang Sauce comes from the Indonesian mother-in-law of a friend of ours. So far I have only tried this Sweet and Sour Sauce recipe on Sweet and Sour Pork. However, I'm sure it will also be excellent for making Sweet and Sour Chicken.

For your easy reference: in Malay, Sweet and Sour Chicken is named "Ajam Panggang" or "Ayam Pangang" and Sweet and Sour Pork is named "Babi Panggang" or "Babi Pangang".

Sweet and Sour Ingredients


For this sweet and sour recipe you will need the following ingredients.


1¼ cup
4
½ cup
1-2 teaspoons
2 tablespoons
1 tablespoon
Water
Bouillon Cubes (the small ½" size)
Tomato Paste
Sambal Oelek (or any hot chili sauce)
Molasses
Corn Starch

The above quantities should yield roughly 1 cup of Indonesian sauce, which should be sufficient to cover 1 to 1½ pounds of meat.





Sweet and Sour Preparation

Bouillon Cubes Bring water to the boil, switch to low heat, add Bouillon Cubes and stir to dissolve; (You could of course substitute water with bouillon cubes by chicken stock)

Add Tomato Paste, Sambal Oelek (or hot chili sauce) and Molasses, stir until you have a smooth sauce, and let simmer for a few minutes;

Taste the sauce, bring it up to your own personal taste by adding Bouillon Cubes and Sambal Oelek as desired;

Mix Corn Starch into 2 tablespoons of luke warm water;

Picture of Indonesian sweet and sour sauce #1 being prepared Gradually add 2 tablespoons of the Corn Starch/water mixture to the sauce, stir the sauce until smooth, and let simmer for a few minutes to allow the sauce to bind;

Sauce should be bound to a nice consistency now; If you feel it is not bound enough, just stir in and cook some more of the Corn Starch/water mixture until satisfied.
