Tomato Salsa

This colorful and tasty tomato salsa can be served with all kinds of barbecue meat or smoked fish. For a Mexican barbecue party, this classic salsa is an absolute must, just like guacamole .

While all over the world this could be called a tomato salad, this Mexican side dish is definitely a "salsa". The ingredients are finely chopped, and typically Mexican.

My wife Juanita loves the Mexican cuisine, and this healthy tomato salsa is one of her favourites.

Ingredients

For this tomato salsa recipe, Juanita will use the following ingredients:

tomatoes, finely chopped
spring onions, finely chopped
cilantro (fresh coriander), finely chopped
Serrano peppers or other green chile peppers, finely chopped
limes *), their juice
fine sugar


*) For clarity, by "limes" we mean those round green lemons. (if you can't get limes, use lemons instead. The taste is not the same, but it's better than nothing!)


Please note that the number of chile peppers that you put in this salsa recipe is to suit your own taste, but you should also take into account the tastebuds of your guests...

Preparation

Juanita's Mexican tomato salad recipe is prepared as follows:

-

Wash, dry and finely chop tomatoes, discard fluid, seeds and white innards;
Put in salad bowl for mixing with other ingredients;

Wash, dry and finely chop spring onions; Add to chopped tomatoes;

-

Wash, dry and finely chop chile peppers, discard seeds and white inner lining; Add to chopped tomatoes;

-

Squeeze limess; Add lime juice and sugar to chopped tomatoes, chiles and spring onions, and mix thoroughly;

-

Finely chop cilantro (fresh leaves of the coriander plant); Keep some nice leaves for garnish;

-

Mix chopped cilantro into salsa, and put tomato salsa in the fridge for a couple of hours to allow lime juice and other flavours to mix well;

Above activities can be done well before serving.

Right before serving:

-

Transfer this Mexican classic tomato salsa to serving dish and garnish with some cilantro leaves.
